For those of you who know me well, know that I LOVE a traditional Thanksgiving Meal. Because we are on the bus, Jeff suggested that we go out and eat or pick up a meal at a grocery store. I told him that I thought about cooking the meal over the campfire. He said that he would cook if I prepared everything. Therefore, I decided that we would eat an authentic cowboy meal.


Jeff is moving the coals around and adding more wood. I am so thankful that I have a husband who enjoys my crazy ideas and participates in them. I am blest!!

Last night, Jeff and I cooked one pan of cornbread over the campfire. It turned out hard as a brick. We did learn a few things. Do not coat the pan with butter. Reduce the coals under the pan, and put a piece of wood between the fire and the pan.
This morning we tried again. AAH - Success!! By 11:00, the beans were on the fire, the potatoes were in the coals, and the cornbread was done. By 12:00, the turkey was on the rotisserie over the campfire and the first pan of cornbread stuffing was on the coals. At 4:00, the sweet potatoes were topped with brown sugar and pecans, the second pan of stuffing was almost ready, the corn, the beans, and the red potatoes were ready. The turkey was looking good. The entire meal was on the table around 5:45. OH let me tell you, this was the best Thanksgiving meal that I have ever eaten. The turkey was super moist, the dressing and gravy were delicious. I did open a can of Cranberry Sauce. I just couldn't have this meal without it. It wouldn't have been American.

We have a new appreciation for the cowboys of long ago. This meal took longer to cook, and was more work. But as Jeff and I end our day we agree that it was worth it.
