I am going to try to post some of the meals we are enjoying. This is mostly because it will help me look back in a recipe book of sorts. One of the hardest adjustments for me as a wife and mother has been to provide my family with nutritious, well balanced food, while cooking outdoors for 9. Jeff is a tremendous help. He loves to cook and does it well cooking outside. I just have to let him know WHAT to cook. Therefore, this is a place for me to record what we ate and liked. Food that was camping friendly and good for us. I am sure that all of these recipes can be done in an indoor kitchen. If you have any good camping recipes leave them in the comment area. I will give them a try and post what we liked.
Chicken Enchiladas
2 cans of white meat chicken
1 can of tomato sauce
1/2 cup of water (pour in can and rinse can)
1 envelope of Enchilada Seasoning
salt and pepper to taste
2 TBSP of butter
1/4 cup of onion (diced finely) can be omitted
1/4 cup of Rotell diced tomatoes and peppers. (about 1/2 the can) (The other 1/2 can be missed with some Velveeta Cheese to make a dip.) (If you do not like some spice leave it out. If you like a lot add the entire can. My children eat it with 1/2 the can and I have one child, Melissa, who doesn't like spicy food.)
Burrito Shells
Sour Cream
Shredded Cheese of your choice
Shred the chicken up well when dumping it out of the can. Add tomato sauce, water, seasoning pack, salt and pepper (Jeff adds Cayenne Pepper to his Enchilada before eating.) Set to the side.
Melt butter in pan. Saute onions and Rotell. Add the chicken mixture and cook until hot. I try to reduce the liquid in half so the Enchiladas want be as messy.
Heat the Burrito shells on both sides for a few seconds in another pan. Remove - spread some sour cream on shell, add some grated cheese, add 1/4 cup (I am guessing. I just add the meat to fill the shell and still be able to wrap it up.) of the meat mixture and wrap up the shell.
I serve this with a toss salad and corn.
This will serve 10 people.
